Sisig Flavor Pizza by Chef Aileen Asilom

Enjoy delicious Sisig Flavor Pizza by Chef Aileen Asilom, using URC Flour.

Ingredient for Sisig Flavor Pizza:

  • 700 grams URC Globe Flour
  • 400 grams Water
  • 25 grams Salt
  • 2 grams Oregano powder
  • 1 tsp Olive Oil

Ingredients for the Filling:

  • Cooked Sisig
  • Mozzarella
  • Cheddar

Procedure:

  1. For the Autolyse Stage, mix only the URC Globe Flour and Water in your bowl. This is without the Poolish Starter, Salt, and Oil. You may hand knead until combined and you may also use a stand mixer for easier mixing. Now, cover your bowl with a cling wrap or kitchen towel and let it rest for 45 minutes – 1 hour at room temperature.
  2. Combine water, URC Globe Flour and salt. Mix until fully combined, then add oil and oregano powder. Continue mixing to fully seal and smoothen the structure of the dough.
  3. Let it rest for one hour. Then, ball up the dough and transfer it to a sealed container with a cover. 
  4. Divide the dough into 5 portions. Using your pizza tray or container, rest your 5 ball doughs for 1-2 hours at room temperature.
  5. Preheat your oven to 200C.
  6. Shape and flatten your dough, add your homemade pizza sauce. For this recipe, we are using mayonnaise. Lastly, we can now add our sisig topping.
