Ingredients:

350g URC Oriental Flour

3g Salt

18g Egg yolk

95g Water

5g Lye Water

350g Pork

10g Salt

5g Black pepper

3g All spice

60g Vegetable Oil

70g Brown sugar

40g Cassava flour

130g Soy sauce

70g Rice wine

60g Red pepper

100g Carrots

25g Ginger

25g Garlic

50g Spring Onions

30g Green Peas

150g Young Corn

450g Water

Procedure:

Noodles

  1. Prepare and weigh ingredients.
  2. Mix flour, water, and salt to form dough, then rest for 30 minutes.
  3. Roll out the dough into a thin sheet.
  4. Fold and flatten until smooth.
  5. Cut into desired noodle strips.
  6. Air dry for 5 minutes before boiling.

Procedure

  1. Season pork with All Spice, salt, and pepper.
  2. Boil egg noodles, drain, and toss with vegetable oil.
  3. Mix sugar, soy sauce, rice wine, and water.
  4. Stir-fry garlic, ginger, spring onions, and pork. Add veggies and sauce.
  5. Dissolve cassava flour in water, add to the sauce.
  6. Fry noodles until slightly brown, add sauce, toss.
  7. Plate noodles, garnish with sauce, meat, veggies, and spring onions. Serve.
