Ube Cheese Inipit by Chef Aileen Asilom

Savor layers of ube and cheese filling, perfectly sandwiched in soft Inipit, made with URC Flour!

Ingredients for Ube Cheese Inipit:

  • 300g Daisy Cake Flour 
  • 300g butter
  • 150g sugar
  • 150g egg yolks
  • 2 tsp baking powder
  • 1 tsp salt
  • 100 g full cream milk 

For the meringue:

  • 150g egg whites
  • 150g sugar

Ingredients for the filling:

  • 200g ube halaya
  • As needed cheddar cheese slices

Procedure in Making Ube Cheese Inipit:

  1. Cream the butter and sugar until light and fluffy
  2. Add in the egg yolks one at a time until the mixture is very light and airy.
  3. Combine URC Daisy Cake Flour, baking powder and salt. Then sift together.
  4. Add in the milk. Continue mixing until all ingredients are blended in and well combined
  5. As for the meringue, whip egg whites and sugar until stiff peaks form using a separate mixer.
  6. Fold the egg whites in the egg yolk mixture.
  7. Deposit batter in prepared swiss roll pans.
  8. Bake in a preheated 170C oven for about 20 minutes until light golden brown.
  9. Cool down. Spread the ube filling and cheese slices on top of the first cake then top with the second cake.
  10. Cut into desired slices and spread ube fudge on top.
