Ube Cheese Rolls by Chef Aileen Asilom

Chef Aileen Asilom’s Ube Cheese Rolls: Soft, flavorful delights made with URC Flour.

 Ingredients for the Ube Cheese Rolls:

  • 600g URC Universal Hard Flour
  • 400g URC Continental All Purpose Flour
  • 400g Water (350g and 50g)
  • 100g Sugar
  • 4 pcs Egg
  • 100g Milk powder
  • 10g   instant dry yeast
  • Ube flavor
  • 17g salt
  • 100g butter

Ingredients for the Filling:

  • 100g  ube paste
  • 100g  cheese cut lengthwise

Procedure in Baking Ube Cheese Rolls:

  1. In a mixing bowl dissolve sugar in 350g water, add ube flavor. Whisk in eggs, milk powder, URC Universal Hard Flour and URC Continental All purpose flour. Mix until it forms into a rough ball. Cover with plastic wrap and let it sit at room temperature for 30 mins until gluten forms.
  2. Dissolve instant dry yeast into the 50g water until completely dissolved. Then, add it into the dough. Continue mixing until incorporated. Do the same with salt and butter. Knead for 5 minutes until it forms into a soft ball. Check if it passes the window pane stage.
  3. Transfer dough in a bowl coated with butter then cover with plastic. Ferment the dough for 45 minutes. Take the dough out of the bowl and do the stretch and folding technique to develop the gluten. Let it rest for 15 minutes. Let it rise until it doubles in size.
  4. Gently deflate the risen dough, form it into a log, and cut it vertically. Cut each half into smaller portions.
  5. Using the palm of your hands, flatten each dough portion, spread ube paste and place a piece of cheese  in the center. Fold the dough around the cheese and form it into a smooth roll, tucking the ends under to seal.
  6. Arrange in a single layer on a parchment-lined baking sheet. Cover loosely with a clean kitchen towel and let it rise until puffy and has doubled in size. Bake in a preheated oven until lightly browned. Remove from the oven and allow to cool slightly, as the filling will be hot!
