Ingredients:
Filling:
75g Coconut Oil
155g Honey
100g Whole Eggs
225g Ripe Bananas, Mashed
56g Almond Milk
3.5g Baking Soda
4g Vanilla Extract
2g Salt
220g Globe First Class Flour
40g Walnuts, Chopped
40g Raisins, Chopped
40g Dark Chocolate Chips
Procedure:
1. Pre-heat oven to 165°C. Grease a 9x5-inch loaf pan.
2. Sift URC Globe First Class flour and set aside.
3. In a mixing bowl of a stand mixer with a whisk attachment, beat coconut oil and honey together. Then, add the eggs and beat well.
4. Add the baking soda, vanilla extract, and salt. Mix until incorporated.
5. Switch to a paddle attachment and mix at low speed only or use a spatula and fold in the flour and mix until combined. Be careful not to overmix the batter.
6. Add walnuts, raisins, and dark chocolate chips and stir lighlty just to combine.
7. Pour the batter into the greased loaf pan. Top with walnuts, raisins, and dark chocolate chips.
8. Bake in a pre-heated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
9. Let the bread cool in the loaf pan for at least 10 minutes, then remove from the pan and transfer to a cooling rack before slicing.
